doing

This week has been a busy one... and I know it will only get busier from here. Therefore, I decided to lay low this morning. To just be.

Rather than starting my day per usual: hopping out of bed, throwing on my running clothes and flying out the door; I decided to take it slow and savor the peace this rainy morning had to offer.

Fiona Apple lulling in the background and the scent of coffee enveloping my kitchen..
I made a deliciously healthy (and hearty) Apple Pie Oatmeal. Like the flavored oatmeal packets that are available in grocery stores, my recipe is equally as quick without all the added sugar. And, its inviting scent of apple and cloves is sure to get you into the holiday spirit.

Without further a due...

Apple Pie Oatmeal

  • 1/2 cup steel-cut oatmeal
  • 2 cups of water
  • One apple cut into tiny slices (I prefer Fuji)
  • 2 tbs Cinnamon
  • 1 tbs Ground Cloves
  • 2 tbs Local Honey
  • 2 tbs Sorghum (optional)
Directions

Combine all the ingredients into a pan and set to medium, cook until boiling. It shouldn't take over ten minutes. Then voila! You have the perfect start to your morning.
